2 tablespoons soy sauce
1 tablespoon rice vinegar

1 tablespoon maple syrup or honey
1 to 2 teaspoons sriracha or chili paste (to taste)
1 clove garlic, minced
1 teaspoon grated fresh ginger
2 to 4 tablespoons hot water (to thin the sauce)
8 ounces noodles (spaghetti, ramen, soba, or rice noodles)
1 tablespoon neutral oil (if stir-frying)
1 cup shredded carrots or bell peppers (optional)
2 green onions, sliced
Chopped peanuts and sesame seeds (for topping)
Lime wedges and fresh cilantro (optional)
Boil noodles according to the package.
