For the Sauce:

  • ¼ cup creamy peanut butter

  • 2 tablespoons soy sauce

  • 1 tablespoon rice vinegar

  • 1 tablespoon sesame oil

  • 1 tablespoon maple syrup or honey

  • 1 to 2 teaspoons sriracha or chili paste (to taste)

  • 1 clove garlic, minced

  • 1 teaspoon grated fresh ginger

  • 2 to 4 tablespoons hot water (to thin the sauce)

For the Noodles:

  • 8 ounces noodles (spaghetti, ramen, soba, or rice noodles)

  • 1 tablespoon neutral oil (if stir-frying)

  • 1 cup shredded carrots or bell peppers (optional)

  • 2 green onions, sliced

  • Chopped peanuts and sesame seeds (for topping)

  • Lime wedges and fresh cilantro (optional)

Instructions

1. Cook the Noodles

Boil noodles according to the package.

Drain and rinse under cold water if using wheat-based or soba noodles.

For rice noodles, just soak if required, then rinse.

Set aside and toss with a bit of oil to prevent sticking.

2. Make the Sauce

In a bowl, whisk together:

  • Peanut butter

  • Soy sauce

  • Vinegar

  • Sesame oil

  • Maple syrup or honey

  • Sriracha

  • Garlic

  • Ginger

Add 2 tablespoons of hot water and whisk.

If it’s too thick, add more water one spoon at a time.

It should be creamy, pourable, and smooth.

Taste and adjust heat, salt, or sweetness.

3. Combine Noodles and Sauce

In a large bowl or skillet, add the noodles.

Pour the peanut sauce over.

Toss well to coat every strand.

Add your veggies or cooked protein now if using.

Warm it briefly in a skillet if you prefer it hot.

4. Add Toppings and Serve

Serve in bowls.

Top with green onions, chopped peanuts, and sesame seeds.

Squeeze lime over the top and add fresh cilantro if desired.
